Zucchini Noodles with Turkey Meatballs

Ingredients
4 large zucchinis, spiralized
1 lb ground turkey (93% lean)
1/4 cup breadcrumbs
1 egg
2 tbsp fresh parsley, chopped
1 tsp Italian seasoning
2 cloves garlic, minced
1 cup marinara sauce (low-sugar)
1 tbsp olive oil
Salt and pepper to taste
Fresh basil for garnish
Instructions

1. In a bowl, mix ground turkey, breadcrumbs, egg, parsley, Italian seasoning, and half the minced garlic. Form into 12 meatballs.

2. Heat olive oil in a large skillet over medium heat. Cook meatballs for 8-10 minutes, turning occasionally, until browned and cooked through.

3. Add marinara sauce to the skillet and simmer for 5 minutes.

4. Meanwhile, heat a separate pan and quickly sauté zucchini noodles for 2-3 minutes until just tender.

5. Divide zucchini noodles among plates, top with meatballs and sauce.
