Veggie-Packed Turkey Meatballs

Ingredients

1 lb ground turkey (93% lean)
1/2 cup finely grated zucchini
1/2 cup finely grated carrot
1/4 cup finely chopped onion
2 cloves garlic, minced
1/4 cup whole wheat breadcrumbs
1 large egg
2 tbsp fresh parsley, chopped
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 cups marinara sauce
12 oz whole grain pasta
Fresh basil for garnish
Parmesan cheese (optional)

Instructions

Preheat oven to 400°F. Line a baking sheet with parchment paper.

Grate zucchini and carrot using a box grater. Place in a clean kitchen towel and squeeze out excess moisture.

Finely chop onion and mince garlic.

In a large bowl, combine ground turkey, grated vegetables, onion, garlic, breadcrumbs, egg, parsley, oregano, salt, and pepper.

Mix gently with your hands until just combined. Don't overmix.

Form mixture into 16-20 meatballs (about 2 tablespoons each). Place on prepared baking sheet.

Bake meatballs for 20-25 minutes, until cooked through and golden brown.

While meatballs bake, cook pasta according to package directions.

Heat marinara sauce in a large saucepan. Add cooked meatballs and simmer for 5 minutes.

Serve meatballs and sauce over pasta, garnished with fresh basil and parmesan if desired.
