Protein Pancakes with Berries

Ingredients
1 cup whole wheat flour
1/2 cup Greek yogurt
2 eggs
1/2 cup milk (or almond milk)
1 tsp baking powder
1/2 tsp vanilla extract
1/4 tsp cinnamon
Pinch of salt
1 cup mixed berries (blueberries, strawberries)
2 tbsp honey
Butter or oil for cooking
Instructions

1. In a large bowl, whisk together flour, baking powder, cinnamon, and salt.

2. In another bowl, mix Greek yogurt, eggs, milk, and vanilla.

3. Combine wet and dry ingredients until just mixed (don't overmix).

4. Heat a griddle or pan over medium heat. Add butter or oil.

5. Pour 1/4 cup batter for each pancake. Cook for 2-3 minutes until bubbles form.

6. Flip and cook for another 1-2 minutes until golden.

7. Serve stacked with fresh berries and drizzle with honey.
