Lean Beef and Vegetable Skewers

Tender lean beef marinated in herbs and spices, grilled with colorful vegetables on skewers. A protein-rich main course.

Ingredients

1 1/2 lbs lean beef sirloin, cut into 1-inch cubes
2 bell peppers, cut into chunks
1 red onion, cut into chunks
1 zucchini, cut into rounds
8 oz mushrooms, whole
1/4 cup olive oil
2 tbsp balsamic vinegar
2 cloves garlic, minced
1 tsp rosemary, chopped
1 tsp thyme
Salt and pepper to taste

Instructions

1. In a bowl, mix olive oil, balsamic vinegar, garlic, rosemary, thyme, salt, and pepper.

2. Add beef cubes and marinate for at least 30 minutes (or overnight).

3. Preheat grill to medium-high heat.

4. Thread beef and vegetables alternately onto skewers.

5. Grill skewers for 10-12 minutes, turning occasionally, until beef is cooked to desired doneness and vegetables are tender.
