Herb-Crusted Baked Cod with Roasted Vegetables

Ingredients
4 cod fillets (6 oz each)
1/2 cup breadcrumbs
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
1 tsp lemon zest
2 tbsp olive oil
1 lb mixed vegetables (carrots, broccoli, Brussels sprouts)
2 cloves garlic, minced
Salt and pepper to taste
Lemon wedges for serving
Instructions

1. Preheat oven to 400°F (200°C).

2. Mix breadcrumbs, parsley, dill, lemon zest, and 1 tbsp olive oil in a bowl.

3. Place cod fillets on a baking sheet. Press herb mixture on top of each fillet.

4. Toss vegetables with remaining olive oil, garlic, salt, and pepper.

5. Arrange vegetables around the fish on the baking sheet.

6. Bake for 15-18 minutes until fish is flaky and vegetables are tender.

7. Serve hot with lemon wedges.
