Avocado Toast with Poached Eggs

A simple and satisfying breakfast or brunch dish. Creamy avocado on whole grain toast topped with perfectly poached eggs.

Ingredients

4 slices whole grain bread
2 ripe avocados
4 eggs
1 lemon, juiced
1/4 tsp red pepper flakes
Salt and pepper to taste
Fresh chives, chopped
Cherry tomatoes, halved (optional)

Instructions

1. Toast bread slices until golden brown.

2. Mash avocados with lemon juice, salt, and pepper.

3. Bring a pot of water to a gentle simmer. Add a splash of vinegar.

4. Crack eggs into small cups. Create a whirlpool in the water and gently slide eggs in.

5. Poach for 3-4 minutes until whites are set but yolks are still runny.

6. Spread mashed avocado on toast.

7. Top each slice with a poached egg.

8. Sprinkle with red pepper flakes, chives, and serve with cherry tomatoes on the side.
