15-Minute Chicken Stir Fry

Ingredients

1 lb chicken breast, cut into strips
2 cups mixed vegetables (broccoli, bell peppers, carrots, snap peas)
2 tbsp soy sauce (low-sodium)
1 tbsp hoisin sauce
1 tbsp rice vinegar
1 tsp sesame oil
2 cloves garlic, minced
1 tsp fresh ginger, grated
2 tbsp vegetable oil
1 tsp cornstarch
Green onions for garnish

Instructions

1. Heat vegetable oil in a large wok or skillet over high heat.

2. Add chicken strips and cook for 4-5 minutes until cooked through. Remove and set aside.

3. Add vegetables to the pan and stir-fry for 3-4 minutes until crisp-tender.

4. In a small bowl, mix soy sauce, hoisin sauce, rice vinegar, sesame oil, garlic, ginger, and cornstarch.

5. Return chicken to the pan. Add sauce and stir-fry for 1-2 minutes until sauce thickens.

6. Garnish with green onions and serve immediately over rice or noodles.
